Tasting notes
This vivid ruby colour introduces you to morello cherry and raspberry fragrances. The smooth structure, with fine but very present tannins, is characteristic of the subtlety of this area’s soil.

Soil: Plots in the plain. The soil of Chorey comes from the alluvial fans of the coombs of Savigny and Aloxe-Corton. Red marls and surface alluvia.
Exposure: South-westerly Cultivation: Ploughing of soils, “lutte raisonnée” rational management with minimal use of chemicals in our vines
Vinification
Picked by hand in small 13 kg crates.
The grapes are selectively sorted by hand before stemming, pressing and vatting.
Regulation of temperatures, cap-punching and alcoholic fermentation with natural yeasts for 15 to 20 days.
Slow pressing, settling and placing in casks.
Maturation
In oak casks for 12 months.
Bottled without filtration.
