Tasting notes
Savigny wines are said to be feminine, hence this crimson slightly purplish colour… Its morello cherry, blackcurrant and raspberry bouquet will develop woodland overtones after a few years. Its
fine and elegant tannins are very present on the palate.

Storage: 12 / 18 °C
Serve with: Thinly sliced duck breast in blackcurrant sauce, red and white meats

Soil: Calcareous and gravely soils. Red marls and coarse surface alluvia.

Cultivation: Ploughing of soils, “lutte raisonnée” rational management with minimal use of chemicals in our vines
Vinification
Picked by hand in small crates of 13 kg.
The grapes are selectively sorted by hand before stemming, pressing and vatting.
Regulation of temperatures, cap-punching and alcoholic fermentation with natural yeasts for 15 to 20 days.
Slow pressing, settling and placing in casks
Maturation
In oak casks for 12 months.
Bottled without filtration.
